What do you like to eat at Christmas?
We have been thinking about what we like to have at Christmas.
Is it a classic roast turkey, wrapped in bacon with the breast moist and the legs rich and juicy? Accompanied by all the trimmings: fluffy roast potatoes cooked in goose fat, bread sauce, sage and onion stuffing, pigs in blankets, roast parsnips, honey-glazed carrots, brussel sprouts with lardons and chestnuts, braised red cabbage, cranberry sauce and gravy? Perhaps a nice Burgundy to go with the turkey?
Or a fine rib of heritage beef or a beef wellington with roast spuds, Yorkshire pudding, cauliflower cheese, carrots, greens and a rich gravy washed down by a glass or two of claret?
Before the days of turkey, we used to have goose. There are few things as indulgent as a roast goose to share with friends and family.
Some of us enjoy a combination of treats over the festive period. We will probably go for goose on Christmas Day and then have a rib of beef on Boxing Day with a glazed ham, a pork pie, some pâté and some smoked salmon to keep the wolf from the door.
Tempting to fit in some roast lamb and some game, perhaps some venison, partridge or pheasant in the run up to the big day.
What’s for dessert, I hear you say? Will it be Christmas pudding, a chocolate roulade, or Eton mess?
And after that? A nice cheese board accompanied by some port?
Fortunately, Elliott’s can help with most of these tasty treats. Whether it’s poultry, beef, lamb, pork or game, we can source and prepare the best produce the farm and our local suppliers have to offer.
Don’t forget the little things that make all the difference - some Taylors English Mustard to go with the beef and pork pie, some honey from the farm’s hives, artisan gelato ice cream, cakes and even a treacle tart to top things off.
